My favourite meal of the day? Breakfast! This particular recipe, is my all time favourite, and is for everyone with busy mornings, or for the those who are lazy or don’t want to waste time cooking or for those who simply like to try something new. I’ve tried this recipe several times, before I came to this final (and absolutely delicious) version, which I love, love, love… and why? Because there is a plenty of fruits. I have never liked those oatmeals, where you can barely taste the fruits and are full of milk and oats – well, who have, right? 🙂 Oatmeal can be basically baked with any type of fruit – but I must say that my (all time) winner are blueberries, strawberries and raspberries – and I hope your too!
(for 2 people for about a week)
150g buckwheat (you can skip this and do it only with oats, if you prefer)
a handful of goji
different types of seeds: I prefer chia and black sesame
2 tbsp cinnamon
2 heaped tbsp of coconut milk
coconut chips and coconut spread (butter)
coconut oil (for the baking dish)
Preheat the oven a 180°C. Place the oats with buckwheat in a bowl and cover them with boiling water – let them soak for about 5-10 minutes. Meanwhile chop the strawberries, and crushed the nuts into pieces.
When the oats are soft – add goji, seeds, nuts, cinnamon, date syrup, blueberries and coconut milk and stir everything together – you have your base, now.
Then you can start placing all the ingredients into your baking dish. Place one layer of the base and top it with strawberries – add coconut spread (as seen on picture). Place second layer of the base on top of this and top it with raspberries and coconut chips.
Place the last layer on top and sprinkle it with cinnamon.
Baked for approximately 30-40 minutes or until slightly brown.
Let it rest for a while after you remove it from the oven and then serve. Or let it cool down and put it into a fridge, where it will last for about 1 week.
