Leek as vegetable has never been one of my favourite – well, until now. I have finally come up with a recipe (has been working on it for about 2 years), where leek taste absolutely amazing! It’s quick, light and I am not afraid to say that it is also a”healthy” 🙂 variation of fried rice, and the preparation won’t take you more than half an hour. What I like the most about this recipe? Everyone can make their own – the base is the most important and then you can let your imagination play :).
Ingredients (serves 4):
250g rice (1 cup)
2 leeks (or 1 leek and spring onion)
200g peas in pods / organic mix beans and sprouts
Spice: Turmeric, Chilli
Cook the rice at first. Meanwhile chop the leeks (spring onion) and heat 1 tbsp sesame and 1 tbsp coconut oil in wok. Add chopped leeks (spring onion) and stir-fry until its soft – add turmeric and small bit of chilli (and salt, pepper). In the meantime cook the peas in pods for about 5 minutes until soft. When the leek is done remove it from the wok. Add the peas in pods (or sprouts) to the wok and stir-fry for about 2 minutes – remove from wok. Mix 4 eggs with salt and pepper. Add ½ tbsp sesame oil to wok and add the egg mixture – cook it as an omelette (see the picture bellow) – add turmeric and chilli – when it’s almost done – use wooden spoon to “cut” the eggs into small pieces – the eggs are done when golden brown. Remove them for wok.
Add ½ tbsp sesame oil to wok – add the rice – stir-fry for about 3 to 4 minutes add turmeric and chilli. When done add all of the already cooked ingredients.
Stir it together – you can add more of spice seasoning if you’d like to – last add 2 tbsp soya sauce. Serve!
Important !! – stir-fry each of the ingredients separately and separately add the spices.
If you are a meat lover, and can’t live without it :), add chicken breasts. In this case you can reduce the number of eggs.
